It's not a competition

We are not in a competition trying to out do each other.   If we all put more focus on our own journey & stop worrying about other people reaching their goals first we would be better off for it.

And because it's not a competition don't be afraid to lift up others along the way if they stumble.

Yes you can actually do both ;)

My Weekly Menu for this Week

I've been low carbing for the past 2 weeks and have lost about 12 pounds so far of the 30 I need to lose to get back to my goal.  The best things besides the weight loss?  My blood sugar is stable, I'm not having as many mood swings and my period is more predictable (yeah, tmi but it is my blog lol).

My plan is pretty much stay within the same carbs I'm taking in now, which is about 20 a day until I get used to the idea of LCHF.  It's hard to switch your mind frame from low fat to this....very hard but I do understand the science about it.

This is my dinner menu...all days are subject to be switched around if I feel like it lol:

Monday:  Taco Stuffed Zucchini

Tuesday:  Florentine Chicken Alfredo with added Zoodles (zucchini cut into the shape of pasta)

Wednesday: Crockpot Chicken Cacciatore with added Zoodles

Thursday:  Beef Stroganoff with added "riced" cauliflower

Friday:  Shrimp Scampi with added Zoodles
http://www.lowcarbfriends.com/bbs/low-carb-recipe-help-suggestions/223582-shrimp-scampi-atkins-test-kitchen.html

Saturday:  Grilled meat and veggies

Sunday:  Crockpot beef roast with veggies

For my lunches I'm going to try to make these http://yourlighterside.com/2009/05/gluten-free-low-carb-buns-aka-oopsie-rolls/ so I can have a hamburger, and pair it with a small salad :)  I premake hamburger patties on Sunday so I can just heat it up during the week.

My breakfasts are pretty much the same as always....3 whole eggs with cooked veggies mixed in.  The only thing I've added are 2 pieces of bacon and a little bit of butter.

Snacks are stuff like hardboiled eggs, cut up veggies and dressing, and cheese.

For me I need to have an idea what to eat each day, it helps me stay on a budget and not obsess about wondering what I'm going to put in my mouth throughout the week.  Nothing is set in stone and if I wind up with plenty of leftovers we'll usually do a leftover night but my kids eat like a plague of locusts lol

All I know is I will make my way back to my goal.  :)

My Fit-cation!

As most of y'all know, I took my family on vacation this past week.  It was our first real vacation without having strings attached like visiting my in-laws (who I love but it gets boring only sitting at their house after one day of fun at an Orlando theme park).

I wanted something different this time.  To be active and explore somewhere as a family.

Which led us to............

Y'all.....this Louisiana girl is totally in love with the waterfalls, wildlife, clear running water in the rivers and streams, the views and all the history (the good and the bad).  It makes my future biologist heart fill with the possible & hope.

The only thing that got to me was the winding roads up hill and downhill.  OMG, I got car sick for the first time in my life. lol It could have been my husband's driving too.  He took those curves like he was driving a roller coaster.  Ugh. I don't know how y'all do that on a daily basis lol

My kids resting while hiking to Abram's Falls.
There was so much to see and do in Gatlinburg and Pigeon Forge.  We did do the Lumberjack show and walked around all of Gatlinburg checking out the shops.  When it rained we went to the aquarium, which was fun.

Other than that we hiked.  I planned short hikes for the kiddos since while they are used to exploring, hiking and biking.....it has always been on the same elevation, which is oh so flat and even below sea level lol Heck I wasn't even used to the altitude.

It was fun though.  I could so see making that place my second home.  We rented a cabin and was able to cook our own meals or fix our lunches for the most part, although we did splurge a couple of times for dinner.  It made it super easy for us to all eat healthy, not to mention it saved us money to spend elsewhere.

My favorite waterfall we saw :)

Being able to do all of this with my family is absolutely amazing.  If you could only imagine how out of shape I was before I started my journey to being healthy.....being able to climb and look down at the world below me had me more in awe than when I did my 2 half marathons.  Me, a girl that could barely walk to the mailbox.  I will never take my health for granted, ever.

I can not wait to plan our next fit-cation.  It got us moving but it was super relaxing too.  No pressures and just enjoying what the natural world put before us.  I loved that.

If you could go on a fit-cation where would you go?

Want a little bit of an incentive to lose weight? Try my next Dietbet!

I love Dietbet.  I first started using them almost a year and a half ago when people asked me about challenges for my facebook fan page.

At first I wasn't so sure but I read up on it and it seemed like a slightly challenging game and the reward would come from all of you instead of me trying to find sponsors.

Win!

So what is it?

~ You join a game....the one I'm heading up is at http://www.dietbetter.com/fromfattofit
and it starts April 14th!  It's $25 to buy into the pot.  I kept it reasonable for everyone.  Invite your friends too!

~ You weigh in starting a couple of days before and submit a photo of the scale and one full length body shot.  Which is kept confidential.  It is just used to verify things.  Your weight is not posted any where for anyone to see.  Dietbet has precautions in place to prevent cheating and if you want to see what exactly they do please check out the link at the bottom of this post that tells you how it works.

~  Then go!  You have 28 days to lose 4% of your body weight.  It seems like a lot depending on how much you have to lose but it's do-able.  Get motivation from your fellow competitors.  A lot of have become friends through the games.

~  After the end, you send in a picture of your scale shot with the word Dietbet assigns you.  If you lose the 4% you split the pot with everyone else that makes their 4%.

Join in if you want.  Nothing like a little bit of friendly competition and extra money in your pocket :)

To check out how it works:

My last Dietbet, the group lost over 4,000 pounds and took home around $35 out of a $20 bet.

(Yes I get compensated by Dietbet.  Doing these games is allowing me to help pay for college)

At Least I'm Not Fake

So as I sit here struggling, I have to sit back and smile.....at least I'm not fake :)

I'll never be one of those people that seem to effortlessly lose weight, have my kids perfectly well behaved or my house looking like it should be on Pinterest. lol

About my weight loss?  I've been bouncing between 180-185 for a little while now.  It's not where I really want to be because I am kind of limited on my clothing options in my closet lol

I'm not really beating myself up over it though.

I've had a few people that are fellow bloggers gasping because I am fully open about it.  It's nothing to be ashamed of, I don't feel like I've let anyone down & certainly don't feel like I'm setting a bad example.

A bad example would be me being dishonest & pretending I'm still at my goal or pretending I'm perfect.

We as humans, are born to make mistakes.  If we didn't we would never learn.

I know I see faked perfection all over the place & it just leaves me shaking my head.

There is absolutely nothing wrong with showing the struggle.

Like now, I know what I need to do.  I really do.  The bad thing with helping people is that I read everything about health & fitness.  Everything.....from the cheesy fitness magazines to case studies.

It's pretty damn overwhelming.  So if you've noticed me scaling back on my FB page on everything except positive quotes, it's for a reason.  I must focus on myself more.

I need to get back to basics.  Tracking, eating generally healthy & moving my body.  That has been what I've always done.

See?  I know what I need to do & I'm forming a plan.....watch out lol

So yeah....I'll keep airing my business on my blog & hopefully you'll take comfort in knowing that I'm human just like you and that despite the ups and downs you'll also know you can still do anything you set your mind to.

:)
